Recipe Rant: Street Tacos

1 ½ lbs. round steak, trimmed of excess fat
1 package McCormick Grill Mates 25% less sodium Montreal Steak marinade
1/4 cup lime non-alcoholic margarita mix
2 tablespoons vinegar
1/4 cup olive oil
16 corn tortillas
½ cup finely chopped red onion
1 cup finely diced tomatoes
1 bunch cilantro, chopped
2 limes, sliced into 8 quarters

Slice steak against the grain into 1/8-inch pieces. Combine steak, marinade packet, margarita mix, vinegar and oil in a gallon Ziploc bag. Allow meat to marinate in fridge for at least 1 hour or up to 24 hours.

When marinading is finished, place meat and marinade in a 12-inch nonstick skillet. Cook over medium high, stirring frequently until meat is cooked through and most of the liquid is evaporated.

While meat is cooking, warm tortillas individually on a medium-high griddle until pliable, turning once. Do not brown. Place tortillas in a warm oven wrapped in a damp towel.

To assemble tacos, take two tortillas together. Fill with meat. Top with onion, tomato and cilantro. Squeeze juice of one lime slice over top of each taco. Serve immediately.

This recipe is right up my alley. My girlfriend loves tacos! I'm going to make these for her.
